Sounds like what you really need is a lemon bar crust or a tart crust.
While not what you are trying to achieve, we made the smitten kitchen recipe for clementine cake last week. It came out very nicely but I felt that I would have preferred to make it with lemons instead. I think I'm going to give it a try sometime in the next month. Want to taste it when I do?
