It's getting slightly less hot because there's more wind today, but it was still too hot to cook anything for next week's lunch. Fortunately bulgur salad only involves boiling some water, so I did that.

Zest one lemon into 2 cups of dry #2 bulgur in a glass bowl (glass bowls is what I've got). Stir that up and add 4 cups of boiling water. Cover the bowl with a towel and ignore it for half an hour.

Empty the hydrated bulgur into a larger bowl and add, in proportions that please you:

Sun-dried tomatoes
Chopped kalamata olives
Toasted pine nuts
Chopped scallions
Beans (I like navy beans)
Feta cheese (left it out this time on account of not having any)
Chopped fresh parsley
Dried dill
Dried oregano (quite sparsely, or it takes over)
Lemon juice
Olive oil
Black pepper

Stir all that up and let it sit overnight. If it needs something, add salt/more lemon/whatever it needs.
