My body has finally decided it's spring, so has finally done its annual "Hey you, eat vegetables!" thing. (I may have primed it last week with fruit salad.) Today I came home with:

Cucumbers
Grape tomatoes, for roasting (second round is in the oven now)
Orange tomatoes, for raw
A red pepper
A yellow pepper
Mushrooms
Bean sprouts
Radishes
Carrots (purple and otherwise)
Greek olives
Fresh mozzarella

I already had some spinach and arugula mix and some random salad greens mix. So I think some or all of the above are going to be dinner tonight and quite possibly two or three meals tomorrow.

And I also made some more fruit salad, and I have yogurt to eat that with. Hopefully this will all distract me a bit from the carb-fest my life has been lately.
