Last night I ad-libbed a fish recipe and got it right the first time. I bought a piece of extremely fresh cod at the Brookline farmers' market, and sprinkled it with olive oil and salt and pepper and oregano and basil and a little garlic powder, and cut up a tomato and threw that in too, and then roasted the whole works for ten minutes at 425ish ("ish" because of the nature of my oven). It came out perfect, and it made enough for dinner and lunch and dinner.

I don't buy a whole lot of fish, because it's usually expensive. (So was this, but when I found out it was caught yesterday morning, I couldn't resist.) When I do cook fish, I tend to overcook it. This time I absolutely nailed it. I love it when I can do that.

I guess it's good that September's over. There really isn't that much difference between September 30 and October 1 except the date, but for some reason October feels better. And it's Friday, which is good too.

ooooh, roasting. What an excellent idea. I did something similar last week, but poached instead. I bet roasting would be even better - more intense flavor instead of watered down.

Yummy fishy! Haven't had good fish in ages. Might be due for some. Last really good fish I improvised was stuffed with breadcrumbs and mushrooms and then poached in a dish with some white wine.
