Rice pudding as it is properly spoken requires raisins. The reason I know this is because I made rice pudding this evening, but I don't have any raisins, so I have naked rice pudding. Which is good, but isn't the real thing.

Ooh, rice pudding! Yes, must have raisins! How 'solid' is the rice part? (mushy or does the rice still have some texture?)

The rice part is still recognizable as rice. I used sushi rice, because that's what I've got. I suspect it would be mushier if I had used different rice.

Of course, that was the second batch. The first batch was a disaster, because I followed a recipe I had never used before. I threw the first batch (and the recipe) out and started over again with proportions of rice and water that actually made sense, and cooked it until it looked right.

Cold rice pudding makes a perfectly adequate breakfast.

I used a recipe my mom had, which turned out to be my family's favorite. I'll send you the version that worked if you want it.
