Apparently I can't quite get through a Thanksgiving season without at least one traditional element. This year I was both not home and not eating turkey (we had pork roast and sauerkraut) and now I want turkey. And stuffing, and farci, and cranberry sauce, and black olives, and all that stuff. Unfortunately a French Canadian Thanksgiving meal for one is too much work for me to bother with right now. So, anyone want to fax me a turkey sandwich?

It's a mix of mashed potatoes, hamburger, ground pork, sage and miscellaneous other spices (I don't know exactly what all's in it; my dad makes it). Some people make pies out of it, but we eat it as a side dish at Thanksgiving. "Farci" is French for "stuffing", but I can't imagine actually stuffing a turkey with it.

That actually sounds remarkably close to our stuffing (not surprising, given that we are also French Canadian). Stuffing is generally ground beef, sausage, some onion and celery and spices. We always just called it meat stuffing (and Wiley thought it was WEIRD when he first started coming to Thanksgiving). My mom does usually make meat pies out of the leftovers, mixed with mashed potatoes, too. Yum.

Stuffing in my family is bread and celery and onions and walnuts (or pecans if we've got those) and mushrooms and poultry seasoning, and farci is farci. I don't know where the stuffing recipe came from; it might be a DiMartino thing instead of a Deschenes thing.
